Ingredients for 2 servings:
8 slices of cereal bread or 4 hamburger buns
1 ripe avocado
1 tomato
50 g baby spinach
1 handful of sprouts
200 g canned chickpeas
extra virgin olive oil to taste
salt to taste.

lemon juice
½ clove of garlic (to taste)
Preparation:
First, prepare the chickpea cream in this way: cook the chickpeas in a pan with olive oil, a clove of garlic, chilli pepper and a little salt. Remove the garlic and transfer the chickpeas to a mixer, add the lemon juice and mince. If the mixture is too thick, add a little water. Set aside.
After preparing the chickpea sauce, toast the slices of bread and cold-assemble the ingredients in this order: proceed with the baby spinach, avocado and tomato cut into thin slices, the chickpea cream and the sprouts. Close the slice of bread.
Extra tip for you:
Sprouts are not all the same: use leek sprouts if you like the strong taste of chives, red radish sprouts if you love spicy and alfalfa sprouts for a sweet and delicate flavor.
